grown in the rich soil of the nishio tea plantations, traditional
matcha is made with 100% nishio region tencha tea leaves. our
traditional matcha green tea is made exclusively from
the tips of the youngest tea plants. smooth, delicate and lightly sweet.
the art of brewing your perfect cup of matcha is as simple
as following a few important steps.
always use cold water. bottled spring water or purified water is best.
bring water to a gentle boil
pour 2 oz of the hot water into a ceramic mug. use more water if you
prefer a more “diluted” matcha. this process
serves to cool the water to approx. 80 c or 176 f.
place two matcha bamboo scoops or ½ a teaspoon of
matcha green tea into a matcha bowl or a round cappuccino
mug or soup bowl.
take the cooled water from the ceramic mug and pour it into the bowl
with the matcha in it.
whisk the tea with a bamboo whisk until a fine froth develops. usually
15 seconds is more than sufficient. (note: do not grind the whisk against
the container. just a light, back and forth motion is sufficient, as
the prongs of the whisk will do all the work. small lumps at the bottom
of the bowl are not uncommon.)

muzi traditional matcha is carefully ground using handcrafted
granite grinding wheels traditionally used since the 17th century. a slow
grinding process protects the tea leaves from the burn of a fast grind
which destroys the natural chlorophyll, amino acids and vitamins making
the tea yellow and tasteless.
all of our tea is packaged in airtight opaque tin containers to ensure
